Simple Chicken Quesadilla

It’s hot outside.  Not just hot, but like devil’s hell hot.  Thank the good Lord for fans that cool down the garage when working out.  Speaking of working out, I hope everyone is doing something for working out.  Your body will thank you later.  

We did something we never do. We binge-watched an entire season of The Waterfront on a Sunday.  Nothing else was accomplished that day, but it was time well spent.  Take time for your family.  Sometimes responsibilities and household chores can wait.  Make sure you spend quality time with the ones you love.  

Speaking of love, our family loves chicken quesadillas.  We came up with this version of a chicken quesadilla and it works when we are short on time.  We use Greek yogurt instead of sour cream, because it's a healthier alternative by adding more protein.

We grab a rotisserie chicken from Sam’s.  You can get it wherever you want, we just shop there.

Ingredients

Add a little oil to a cast iron skillet and warm up the pan.   We take the Mission low carb wraps and put it on a cast iron skillet.  Take the rotisserie chicken apart and add it to the wrap.  Take a spoonful of Greek yogurt (also from Sam’s, because we shop there) and put it on top of the chicken.  You can add shredded cheese and avocado to the quesadilla.  Fold it in half and flip it until it’s a little toasty.
