
Sweet Potato Slices
Happy New Year everyone! I hope everyone's new year is getting off to a great start. One of our goals this year is to eat more at home. The only way we can accomplish that goal is being prepared and having our meals planned ahead of time. So far we are doing good. One of our go-to side dishes is this sweet potato recipe.
Start by taking four or five sweet potatoes of equal size, length and width.

Wash them in the sink and peel them with a vegetable peeler. Cut the sweet potatoes up in slices of equal width. Try to get as thin as possible.

Put them in a bowl. Then take two to three tablespoons of butter and melt it. Add a teaspoon or two of cinnamon to the butter. Using a pastry brush, spread the butter and cinnamon over all the sweet potatoes. You may have to do these in two batches, depending on how big your bowl is.

Lay them vertically in a cast iron skillet, as shown in the picture below. You can add more butter to the sweet potatoes if you would like. (Uncooked sweet potatoes in the picture below)

Bake on 415 for 40 to an hour. Your cook time will depend on how thick you make your sweet potato slices.
