
Sheet Pan Chicken & Veggies
Happy fall! Hope you all have had a good week. Supper time is always important to our family. We try to sit down as a family and eat at the dinner table. So many special conversations happen around the table. Make it a priority to put down devices and talk to each other. It can be a challenge when the kiddo doesn't want to eat his dinner and wants to play instead; but that is a time to teach the importance of a time to be silly and a time to be serious. He always says his prayer of thanksgiving for the food before he eats. That is something we are super proud of.
This sheet pan chicken and veggies is super easy and you don't dirty the kitchen. Did you hear me? SUPER EASY CLEANUP!
Start off with your favorite veggies or whatever you have in the refrigerator. Wash the veggies and prepare them for cooking. Make sure they are as dry as you can get them.

Line a sheet pan with tinfoil. Put the veggies on the sheet pan. Put olive oil all over them. I use a brush to brush the olive oil over them. Get them covered. Then, take your favorite seasonings and season the veggies.
Use chicken thighs with the skin on and bone in.

DO NOT WASH YOUR CHICKEN. I'm serious. Washing raw chicken splatters harmful bacteria all over your kitchen counters or wherever the splatter lands. Your chicken is going to get cooked. You don't need to wash it. This has been a big misconception. So take the chicken, put on top of the veggies and get them nice and tucked under the chicken. Season your chicken with your favorite seasonings.

Put in the oven for 500 degrees....yes, you read that right....for 45 to 50 minutes.

It's done! Be careful pulling it out of the oven. It's super hot, but super good! The chicken is nice and crispy and the vegetables are so good. Hope you enjoy it as much as our family does.
