
Roasting a Pumpkin
Happy Halloween! This is one of our favorite but busy weeks! We have done all the things Halloween. We have gone to fall festivals and trunk or treats and we will end it with trick or treating in one of our favorite neighborhoods with dear friends.
Halloween means pumpkins and pumpkins mean some awesome dishes! Skip the canned pumpkin. Roasting a pumpkin is so easy and so much better!
Start with a pie pumpkin.

Cut it in half. I use a paring knife for this. I always snap the stem off before roasting it.

Scoop out the seeds and pulp. Save the seeds for roasting later.

Lay it down on tinfoil and pop it in the oven for 30 minutes on 375.

Once you pull it out, let it cool off. It's hard to handle when it's super hot. Once it's cooled off, you can then scrape the pumpkin out of the skin.

Once you have scraped it out, use a blender or an immersion blender to puree it.

Store in the refrigerator and use for your favorite pumpkin dishes. Happy Halloween and enjoy this fall season!
